koohkooh

This is a yummy Iranian quiche. You can make it healthier by baking it but I have to warn you the fried version is better.

INGREDIENTS:
2 medium bunches of parsley
1 small bunch of cilantro
1/2 small onion
1/2 C finely chopped walnut (food processor)
3 table spoons olive oil
salt and pepper


- Wash and dry the parsley and cilantro completely
- Shove them in a food processor and get them all chopped up
- place onion in food processor as well and squeeze the water out of it.
- mix it all together
- add 1/2 cups finely chopped walnut
- add 8 eggs, salt, and pepper to taste
- mix well
The mixture should be thick like pancake batter but not runny and not so your fork stands up in it.

Then in a large sauce pan heat about 3 table spoons of oil. When it is nice and hot add then mixture cover and cook for anywhere between 20-30 minutes. keep checking on it to make sure that you don't over cook it because it will dry out.

Now the healthy option is to just grease a pyrex, I prefer to use my Le Crueset because it cooks more evenly and has a lid.

I serve this with feta cheese, pita or lavash bread, cucumbers and tomato.
