Masteh Khiar (cucumber yogurt)

Ingredients
- 1 large english cucumber; 1/2 grates, the other half chopped fine
- 1 bunch of green onions chopped fine
- dried mint (you can use fresh if you want)
- salt and pepper to taste
- 1 quart nonfat plan yogurt (I prefer Greek style or Mountain High or Nancy's if store bought);
if you make home made yogurt woould drain it through a cheese cloth to make it Greek style.

Yes that easy now just mix it all up. If your grated cucumber in really watery drain it out otherwise it's that simple. Add mint, salt, and pepper to taste.

You can use this as a dip, on it's own, or over crunchy rice.
I like serving this with pita chips, especially homemade ones where you just cut up your pita bread into little triangles and brush with olive oil dash with salt and pepper and bake for a few minutes till golden and crunchy.
