Salad Olovieh

This is one of my favorite potato salads ever.

  • 2 large chicken breasts cooked (I sometimes use rotisserie chicken) adn chopped up
  • 10 eggs cooked and chopped (I only use the whites and maybe 3-2 yolks to cut down on fat)
  • 5-7 pounds potato (this is about 8 small-med potatoes)- cooked and grated
  • 1 16oz bag of frozen peas and carrots (feel free to use fresh, I just don't have the patience to chop up the carrots)
  • 1 16 ounce jar of pickles chopped finely (feel free to add more if you wish)
  • 1 small jar NF yogurt or sour cream (low fat/NF)
  • mayonnaise to taste
  • lemon juice to taste
  • salt and pepper to taste
Literally mix it all together add the NF yogurt, salt, pepper, and lemon juice (~3 tbsp) and mix it up. It may be on the dry side that is when I add the mayo. I use real mayo only because I don't like the NF mayo but the low fat mayo isn't bad.

This keeps for about a week. I know Autumn and Grant love this salad as does Joe so it never lasts long for us. Goes great with crackers, on lettuce as a wrap, with bread, or just on it's own. Enjoy.
