Salad Shirazi

Ingredients

- 1 english cucumber chopped fine
- 2 small sweet onion chopped fine
- three fresh medium sized tomatoes chopped fine
- mint
- cilantro (optional)
- olive oil
- lime or lemon juice
- salt and pepper to taste


Combine all of the vegetables. Add mint, (cilantro), salt, and pepper to taste. Mix well then add about 2 tablespoons olive oil and 3 tablespoons lime or lemon juice. You can adjust these quantities to taste. Can make and serve fresh but best if it sits for about an hour or so for the flavors to soak in.
